I suppose I am one of the least technical people on this forum. I am not a developer, not a sys admin, but rather a power user looking to set up version control software for some devs.
To me the instructions Installation from binary were much too terse. But hey, maybe they are sufficient for your target users.
I more or less followed the instructions in the YouTube video called How to install Gogs on a Linux Server (DigitalOcean)
During the last 20 seconds or so of that video the narrator explains the benefit of pressing
Ctrl + C.
to stop Gitea from running and then appending the ampersand to ./gitea web to cause Gitea to run in the background:
./gitea web &
I found that very helpful.
